Veggie Rice, Roasted Chicken Breast, and ....Cellentani a la Alina

If you are like many of us, you probably have a set grocery budget. Some of the most inexpensive items can be turned into really incredible dishes. Like the ones I'm about to share with you. I always have rice in my pantry and chicken in the freezer. If you look at the weekly ads from your local market, you can sometimes find the whole chicken for under $1.00 per pound or chicken breast for under $2.00. I love to use Tyson but you can use whatever brand you like. I buy the rice from the Asian market and use Jasmine rice. Don't laugh, but I get the 25 lb. bag and it lasts me for a very long time. I hope you give these dishes a chance. Your family will thank you :)

Veggie Rice
Here's what you'll need:

2 Cups of Jasmine RIce
4 Cups of Chicken stock
2 tbs. seasoned salt
2 tbs. olive oil
1 tbs. each dry parsley, oregano, chopped garlic, pepper flakes
2 cups mixed frozen veggies (you can also use fresh)

Heat the olive oil and cook the rice about five minutes. Add seasoned salt, parsley, oregano, garlic and pepper flakes. Cook for another five minutes stirring continuously. Add frozen veggies and stock. Bring to a boil then turn down the heat and simmer on low covered for 20-25 minutes (until all water has evaporated and rice fully cooked).

Roasted Chicken Breast
Here's what you'll need:

5 chicken breasts (with bone and skin)
Seasoned salt
Olive oil
4 Lemons
1 cup of white wine (you can also use water)
Oregano

Preheat the oven at 375 degrees. Cover a baking sheet with aluminum foil (twice) and spray with non stick cooking spray. Sprinkle seasoned salt and oregano over the chicken on both sides. Place on prepared cooking sheet and drizzle with olive oil. Cut lemons and add to pan. Cook for 15 minutes then add water or wine to the pan. Continue to cook for another 15 minutes. Let it rest for 10 minutes before cutting into it.

Cellentani a la Alina
Here's what you'll need:

1 box of Cellentani pasta
Leftover roasted chicken - shredded or cut into small cubes
1 tbs. olive oil
1 tbs. butter
1 chopped onion
1 chopped green pepper
1 whole head of garlic
Zest from 1 lemon
Feta cheese (shredded or crumbled)
1/4 cup of tomato sauce

Cook pasta - follow the instruction on the box. Drain and set aside. Sauté the onion, garlic, and green peppers in olive oil and butter. Cook for five minutes or until soft. Add tomato sauce and shredded chicken. Cook for another 10 minutes. Add pasta and lemon zest and continue to cook on low for 5 minutes. Mix in the feta cheese and serve.

Lebanese Bulgur Recipe

I don't know about you, but in my house we like to try dishes from all around the world. Some are great, some are weird, some are downright crazy. I always say that my husband could probably put Andrew Zimmern to shame since he will try ANYTHING at least once. One afternoon, as we were waiting in line to pay for our groceries, my hubby sees these bags of Bulgur right next to the checkout and decides to grab one. Needless to say, I've never cooked it before; actually I never heard of it.

I looked online for a few recipes and found one that I think you will enjoy too. You can serve this as a vegetarian dish with pita bread, or as a side dish with roasted chicken or any other kind of meat you like.

Here's what you'll need:

1/3 cup of olive oil
1 onion chopped
2 (or more) garlic cloves chopped
1 tsp. dry basil
1 cup bulgur
1 cup chopped and seeded tomato
1 1/2 cups chicken stock
1 tbs. tomato paste
1 tsp. salt/pepper
1 tbs. chopped parsley
1 tsp. crushed red pepper flakes (optional)

Sauté the onion and garlic in olive oil until it becomes translucent; add chopped tomato, basil, salt and pepper, and red pepper flakes. Mix well. Add bulgur and mix to coat then stir in the chicken stock. Reduce the heat and cook on low for 5 minutes. Add tomato paste then cover and cook on low for 20 minutes.
